Si tienes el Root Explorer (
MUY recomendable, por cierto), mantienes pulsado encima del build.prop y en el menú contextual que te aparece pulsas sobre Abrir Con (Primera opción).
Seguidamente, buscas Editor de texto y seleccionas. Automáticamente se te abrirá y podrás editar
