Hola juanpirulo, mirando los metodos de instalacion en xda de la AOKP y la nightfly, el metodo de instalacion es el mismo de siempre.
Asi que no entiendo en que dices que cambia, aparte los 2 unicos kernel para cambiar el recovery y que haga el ext4 son el redpill u overcome. Pero vamos que el metodo es el mismo para todas, quitando lo del mtd, que ya sabemos que hay que flashear con odin para meter la stock y dejar las particiones originales.
Si cambiaron algo que no viene en los hilos de xda(que yo no veo), te agradeceria que los dijeras.
Instalacion de la AOKP:

- copy the rom onto your SD card or internal memory
- reboot in to ClockworkMod Recovery
- go to wipe menu
- select both "wipe data / factory reset" and "wipe dalvik cache" ** MAKE SURE YOU DO THIS BEFORE INSTALLING THE ROM **
- go to install -> choose from either internal / external sd card -> navigate and select the zip file
- after a few seconds, the tablet will reboot and go into a bootloop (you will see a CWM recovery screen flash up). hold down the vol up key and it should go back to recovery.
- again, go to install -> choose from either internal / external sd card -> navigate and select the zip file for the rom
- do the same as above for gapps (google apps)
- reboot

Once you've flashed it, reboot into download mode again and flash any kernel with recovery (any non-MTD kernels from humberos.com.br, or this forum, for your tab model)
After you've flashed the kernel, reboot into recovery, and this time, install the zip you just downloaded from CyanogenMod servers.
Install Google Apps if you want (gapps-ics-* from goo.im) [optional]
Reboot and enjoy your tab
Normal install :
You need to have a kernel with CWM Recovery
Get the zip from the above download links
Put the zip on your sdcard, reboot into recovery, and install the zip
It'll reboot a few times during the install, that's normal
