If I'm not wrong you can open .zip file with 7-Zip end replace ZTE Dialer with CM7 Dialler (just open a ROM having CM7 Dialler with 7-Zip also and drag .apk from one to the other, it's in System/Apps I think). I general opening zip file you can add/remove apps.
Besides that I think you can just install another Dialler as a standard app (apk) and you'll be ask which one to use. Then you can remove undesired app with Root Explorer.
But let someone confirm this.
