Muchas gracias a los dos. El problema es que al ser una aplicación del sistema no tienes opción a desinstalarla sin ser root.
Yo mismo he encontrado la soución en un foro en inglés:
Think you'll probably just need to reinstall it to fix it.
Just get ES File Explorer from the market.
Using ES File Explorer go to /system/app/ then click the YouTube.apk, it will prompt you if you want to re-install it.
Click yes, then restart your phone.
No me ha hecho falta reiniciar el teléfono, pero sí aceptar aplicaciones ajenas al Market. Ahora ya funciona como debía.
